Brownies with Raspberry Sauce and Chocolate Ganache

Ingredients:

Brownies:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Raspberry Sauce:

  • 2 cups fresh or frozen raspberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Chocolate Ganache:

  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped

Instructions:

Brownies:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C).
    • Line a 9×13 inch baking pan with parchment paper or lightly grease it.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, combine the melted butter, sugar, and vanilla extract.
    • Add the eggs one at a time, mixing well after each addition.
  3. Combine Dry Ingredients:
    • In another bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  4. Combine and Bake:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
    • Let the brownies cool completely in the pan.

Raspberry Sauce:

  1. Cook Raspberries:
    • In a medium saucepan, combine the raspberries, sugar, and lemon juice.
    • Cook over medium heat until the raspberries release their juices and the mixture comes to a simmer.
  2. Thicken Sauce:
    • Stir in the cornstarch mixture and continue to cook until the sauce thickens, about 2-3 minutes.
    • Remove from heat and strain the sauce through a fine mesh sieve to remove seeds, if desired.
    • Let the sauce cool.

Chocolate Ganache:

  1. Heat Cream:
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  2. Melt Chocolate:
    • Place the chopped dark chocolate in a heatproof bowl.
    • Pour the hot cream over the chocolate and let it sit for a minute, then stir until the chocolate is completely melted and smooth.

Assembly:

  1. Spread Ganache:
    • Pour the chocolate ganache over the cooled brownies and spread it evenly.
  2. Add Raspberry Sauce:
    • Drizzle the raspberry sauce over the ganache, using a toothpick or knife to swirl it into the chocolate.
  3. Serve:
    • Allow the ganache to set before cutting the brownies into squares.
    • Serve and enjoy your brownies with raspberry sauce and chocolate ganache!
